Party Planning - Poolside Weekends

Finally - it's that time of year when a weekend by the pool is all that's on the schedule. Well, that and some tasty eats that can be easily adapted to feed a crowd. (Didn't you realize that your pool had become the neighborhood hangout?)

For our menu, simply mix up a big batch of coleslaw the day before - the flavors improve overnight! - as well as several batches of the Corn Prosciutto biscuits. Then it's just a question of quickly boiling shrimp in their shells for a delicious feast. Oh, and don't forget to top things off with summery strawberry sundaes!

Pour:
Well, beer, obviously. But also a cold crisp white wine like a Sauvignon Blanc or Albariño. Here are a few we've enjoyed lately:

Beer Boiled Shrimp
This is seriously so fast that you don't have to think twice about doing another batch later in the day - so cook 'em as you need 'em!

For 3 pounds fresh shrimp (in shells):

Bring 48 ounces beer (whatever kind you've got) and 1 tablespoon kosher salt to a rolling boil in a large kettle. Add shrimp; return beer to a boil, then reduce heat to simmer. Cover and simmer 3-5 minutes. Drain. Equally good served hot, cooled or chilled. So easy and so flavorful!

All-American Creamy Coleslaw
1 head green cabbage, finely shredded
2 large carrots, finely shredded
¾ - 1 cup Hellmann's mayonnaise
3 tablespoons sour cream
¼ yellow onion, finely grated
1 tablespoon sugar
2 tablespoons rice vinegar
1 tablespoon dry mustard
2 teaspoons celery salt
Salt and freshly ground black pepper

Toss the cabbage and carrots in a large bowl. Starting with ¾ cup mayo, whisk together the remaining ingredients in another bowl and then add to cabbage. Mix well to combine and taste for seasonings, adding additional sugar, salt and/or pepper, as needed. You may also add additional mayo now, or in the morning, if needed.
