Recipes: Appetizers: Sesame Ham &
Cheese Squares
So much easier than frying in batches,
these baked bites couldn't be easier. You
can make the squares up to 6 hours ahead
of time and refrigerate until ready to bake
and serve. Makes about 2 dozen squares.
8 one-eighth-inch slices ham
8 thin slices of prosciutto
4 one-eighth-inch slices Gruyere or Swiss
cheese
5 teaspoons corn or vegetable oil
5 eggs
freshly ground black pepper to taste
¼ teaspoon cayenne pepper
1 cup sesame seeds
1 1/3 cup dried bread crumbs
1/3 cup minced Italian parsley
2/3 cup all purpose flour
¾ cup melted unsalted butter
Preheat oven to 400ºF.
On a work surface, lay out four slices
of ham. Cover each with a piece of prosciutto,
then a slice of cheese, another slice of
prosciutto and a second slice of ham. Trim
sides. Cut each "sandwich" into
small squares - 6 or 8 squares from each
sandwich.
Beat the oil, eggs, pepper and cayenne
together in a bowl. In another bowl, toss
the sesame seeds, bread crumbs and parsley
until well combined. Place flour in a third
bowl.
Dip each square first into the flour, then
the egg mixture, then the sesame seed mixture,
and place on a buttered baking sheet. Drizzle
melted butter over all. Bake for 15-20 minutes,
until sandwiches are golden.
Drain briefly on a paper towel and serve
while still hot.
