Recipes: Salads:
Couscous Salad with Tomatoes & Arugula

1 box of couscous, prepared according to package directions.

Mix in with a fork:
2 cups baby arugula, stems trimmed
5 plum tomatoes, diced
¼ cup red onion, finely chopped
2 tablespoons lemon juice
1/3 to 1/2 cup olive oil
¼ cup chopped parsley

Season to taste with coarse salt and freshly ground black pepper.

Wine Skinny Tip: This is a great salad for picnics -- holds well and tastes great at room temperature!
